These crispy German potato fritters are unique and flavorful with Classic Sauer Frau kraut.

 6 Medium sized potatoes, peeled and shredded
 5 ½ cups Shredded, peeled granny smith apples
 5 ½ cups Sauer Frau Classic Sauerkraut
 2 Eggs, lightly beaten
 2 tbsp All purpose flour
 ¼ tsp Baking powder
 ½ tsp Salt
 ¼ tsp Pepper
 ½ cup Finely chopped onion
 ¼ cup Vegetable
 Chopped green onions (for garnish)
 Sour cream

Lightly beat eggs in a large bowl.

Whisk in flour, baking powder, salt and pepper, and mix in potatoes, apples, and sauerkraut.

Heat oil in a large skillet over medium heat. In batches, place large spoonfuls of the latkes mixture into the skillet, and press to flatten. Cook for 3 minutes, then flip and cook on the other side for 3 additional minutes until brown and crisp on both sides. Drain on paper towels.

Garnish with chopped green onions and serve hot with sour cream on the side.
